My thought is how will Schiano win in the NFC South after not being able to win in the Big East?

Sounds weird, but I could actually see Schiano doing well in the NFL. He seems to be better geared for that type of football anyways.

Well they do have talent in Tampa Bay but they also have one of the toughest divisions to compete in with the Saints, Falcons and Panthers

I'd worry more about the team drain if I were the Big East!
